Basmati is a long-grain rice prized for its slender shape, delicate aroma, and light, fluffy texture once cooked. Unlike short- and medium-grain rices, basmati grains are narrow and elongated and continue to lengthen as they cook rather than becoming wider. This unique structure helps the grains stay separate and airy, with very little surface starch, creating a clean, dry finish instead of creaminess.
Basmati rice is especially well suited for dishes where distinct grains and fragrance matter, such as pilafs, biryanis, spiced rice dishes, and simple steamed preparations served alongside curries and grilled meats. Its naturally aromatic character and subtle nuttiness enhance seasoned broths and spices without overpowering them. Because it does not release much starch, it remains loose and fluffy rather than sticky, making it ideal for layered or mixed rice dishes.
To cook basmati rice properly, it should be rinsed thoroughly to remove excess surface starch, then simmered gently using about 1 part rice to 1.5–2 parts water or broth. Once tender, it benefits from resting covered for a few minutes before fluffing to allow excess steam to escape and the grains to separate fully. Sivaris cultivates this rice in the protected Albufera Natural Reserve near Valencia, where careful growing and milling preserve the grain’s length, aroma, and consistent performance in the kitchen.
